La Brújula sardinillas, from the coastal waters of Galicia, are only prepared in season (between July and September after the Spring fishing season) and are processed from fresh, not frozen, fish. The best of the catch is selected before being carefully cleaned by hand to avoid bitter flavours then are steamed before being covered in olive oil, to preserve their flavour and texture, and being packed by hand with 16-20 fish per tin.
Serve by itself on toast or as part of a plate of cured fish.
