This Cava sparkling white balsamic vinegar is produced by the well known cava house, Agusti Torello Mato in Sant Sadurni d’Anoia, Catalonia. The Torello family has been making cava under their own label for more than 50 years and is well known in the best wine circles and the best Spanish restaurants for its artisan production and quality cava. It was at the request of many of these restaurants that the family began to make its artisan vinegar.
Traditional grapes such as Macabéo, Xarello, and Parellada are used to create the cava, rather than modern varieties such as chardonnay grapes. The Cava is acetified for 5 months in American oak barrels before being aged for 1 year in French oak barrels. The result is fruity on the nose, and especially on the palate, with a soft, dry finish that lingers. The vinegar is suitable for reductions, game, fine and spicy carpaccios, oriental cuisine, and sweet dinner courses.
