Ximénez-Spínola is well-known for specialising in natural wines made from Pedro Ximénez grapes. Acetum Flumen is the exclusive owner of the annual production of "en rama" vinegar made by the firm and taken directly from the cask without undergoing any further treatment.

This is an innovative new vinegar from Oleum Flumen´s own PX grape harvest, oak-barrel aged for 25 years and unfiltered so some sediment is normal. Very limited production with each bottle numbered.
